It is fermented with great care in temperature-controlled stainless steel tanks using selected yeasts. The wine then rests on the lees for six months, to give complexity and structure. The malolactic transformation takes place partially depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature until it is judged to be ready for the market. Organoleptic description: The wine is crystalline, straw yellow with greenish reflections. Intense and complex nose, with notes of lime, jasmine, pear and passion fruit.
