It is fermented with great care in temperature-controlled stainless steel tanks using selected yeasts. The wine then rests on the lees for six months, to give complexity and structure. The malolactic transformation takes place partially depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature until it is judged to be ready for the market. Organoleptic description: The wine is crystalline, straw yellow with greenish reflections. Intense and complex nose, with notes of lime, jasmine, pear and passion fruit. A fresh and quite savory wine, which releases delicate notes of citrus, flowers and honey on the palate. Extremely seductive, it remains easy to drink despite its complexity. Pairing: Ideal as an aperitif. Particularly appropriate with sushi and raw fish in general, white meats as well as exotic cuisine. Serving temperature: 10-12 ° C Curiosity: In one of the vineyards of our Fiano origin, the traditional radial cultivation system is still used, which consists in crossing the branches of two vine stocks planted in pairs. This system, now no longer in use, can bring beautiful surprises in terms of yield and quality of the grapes produced. Related
