These bamboo shoots are known for their soft texture and pleasant bite, thanks to the limited exposure to sunlight in the mountainous terrain. At Momoya, we discard the tougher segments near the nodes and use only the most delicate parts. These are then fermented with lactic acid, aged, and sun-dried to concentrate their natural umami.
