Description: Denomination: Greco di Tufo DOCG Grape variety: 100% Greco Vineyard location: Tufo, San Paolo, and Santa Lucia hamlets Exposure and altitude: south-west 350 – 450m asl Nature of the soil: sulfur, clay, limestone Vine training: Guyot espalier Plantation density: 3,000 plants per hectare Average age of the vine: 20 years Yield per hectare: 70 quintals per hectare Harvest: hand-made in mid-October Average quantity of bottles: about 20,000 Bottle size: 0.75 l – 0.35 l Alcoholic degree: generally 13 ° Vinification technique: Only the free-run must is used for our Greco, the spearhead of our cellar. The must is fermented with great care in temperature-controlled stainless steel tanks using selected native yeasts. The wine then rests on the lees for six months to give complexity and structure. The malolactic transformation occurs partially, depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature until it is judged to be ready for the market. Organoleptic description: Straw yellow with delicate golden reflections. On the nose, yellow peach and apricot, flint and orange blossom, with notes of Mediterranean scrub. When it opens, aromas of lime and lemon emerge. On the palate, it is an intense, fresh and savory wine, with a refreshing citrus fruit. The taste persists for a long time, leaving exquisite notes of almond, eucalyptus and lemon zest. Pairing: The freshness and flavor of this wine make it go very well with fish-based dishes such as salmon, seafood, grilled fish, but also with white meats and fresh cheeses. This Greco di Tufo, thanks to the particular balance between softness and hardness, is also perfect as an aperitif or drunk as an appetizer.
